I just made the most delicious vegetarian Italian pasta salad and I couldn't wait to share it with you all! The flavor combination in this dish is seriously perfect, and it's so easy to throw together for a quick lunch or dinner. To start off, cook a pound of your favorite short pasta (I used fusilli) according to the package instructions until it's al dente. Then, rinse the pasta with cold water to cool it down. Next, it's time to prep the veggies! I used cherry tomatoes, green bell pepper, red onion, olives, and parsley. Cut the cherry tomatoes in half, chop the bell pepper and onion, and roughly chop the olives and parsley. Now it's time to make the dressing. In a small bowl, whisk together garlic, dijon mustard, red wine vinegar, olive oil, salt, and pepper. Pour the dressing over the cooled pasta and toss until it's evenly coated. Add in the chopped veggies and give everything a good mix. I like to let the pasta salad sit in the fridge for a bit to soak up all the flavors, but you can also serve it right away if you're in a rush! I added two images of the salad for you to see how it looks. As you can see, the colors are so vibrant and the textures are perfectly balanced.

Ingredients:
