Lemon Chicken Pasta Recipe
Ingredients:
- 16 oz. spaghetti pasta
- 1 lb. skinless and boneless chicken breast, cut into bite-size pieces
- 1/4 cup all-purpose flour
- 1/4 cup unsalted butter
- 1/4 cup olive oil
- 4 cloves garlic, minced
- 1/2 cup chicken broth
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- Zest of 1 lemon
- Juice of 1 lemon
- Salt and black pepper, to taste
- Chopped parsley, for garnish
Instructions:
- Cook spaghetti according to the package directions. Drain and set aside.
- Toss chicken with flour, salt, and black pepper in a bowl until evenly coated.
- Heat a large pan over medium heat and add butter and olive oil. Once hot, add chicken and cook until browned on all sides, about 3-4 minutes per side.
- Add garlic to the pan and cook until fragrant, about 30 seconds.
- Pour in chicken broth and stir until well combined. Simmer until chicken is cooked through, about 3-4 minutes.
- Pour in heavy cream and grated Parmesan cheese. Stir until the sauce is thick and creamy.
- Add lemon zest and juice. Season with salt and black pepper, to taste.
- Add cooked spaghetti to the pan and toss until well coated with the sauce.
- Garnish with chopped parsley and serve.
One Pot Vegetarian Penne Pasta Recipe
Ingredients:
- 1 lb. penne pasta
- 1 can (14 oz.) diced tomatoes with juices
- 1 onion, diced
- 4 cloves garlic, minced
- 4 cups vegetable broth
- 1/2 cup heavy cream
- 2 cups baby spinach
- 1/4 cup grated Parmesan cheese
- 1 tbsp. olive oil
- Salt and black pepper, to taste
- Chopped basil, for garnish (optional)
Instructions:
- In a large pot, heat olive oil over medium heat. Add onions and garlic and cook until translucent, about 3-4 minutes.
- Add diced tomatoes and their juices, vegetable broth, and penne pasta to the pot. Stir well to combine.
- Bring the mixture to a boil and reduce heat to low. Cover the pot and simmer for 10-12 minutes or until pasta is cooked through. Make sure to stir occasionally.
- Stir in heavy cream and Parmesan cheese. Add baby spinach and stir until the spinach is wilted. Season with salt and black pepper, to taste.
- Garnish with chopped basil, if desired.
